KFC Brown Gravy Recipe

Ingredients
  

  • 4 tbsp unsalted butter
  • 4 tbsp all-purpose flour
  • 2 cups beef broth
  • 1 cup chicken broth
  • 1 tsp soy sauce
  • 1/2 tsp onion powder
  • 1/4 tsp garlic powder
  • 1/4 tsp black pepper
  • Salt to taste

Method
 

  1. Melt the butter in a medium saucepan over medium heat, then add the flour and whisk constantly for 3 to 4 minutes until the roux turns a deep tan color.
  2. Slowly pour in the beef broth and chicken broth in a thin stream while whisking, then bring to a gentle simmer over medium-high heat, whisking until the gravy thickens and turns glossy.
  3. Reduce heat to low, stir in the soy sauce, onion powder, garlic powder, and black pepper, and simmer for 3 to 4 minutes until the gravy coats the back of a spoon. Season with salt to taste.
  4. Pour into a warm serving bowl or directly over mashed potatoes and finish with a crack of fresh black pepper.

Notes

Cold broth added to a hot roux is the most common reason gravy gets lumpy, so pulling the broth out of the fridge a few minutes early makes a real difference. If the gravy thickens too much as it cools, a tablespoon of warm water or broth stirred in off the heat fixes it right away. This recipe doubles easily if you are feeding a crowd.
