Herb Crusted Chicken Recipe

Ingredients
  

  • 2 large boneless, skinless chicken breasts (about 8 oz each)
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp smoked paprika
  • 1/2 tsp dried oregano
  • 1/2 tsp dried thyme
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/4 tsp cayenne pepper
  • 2 tbsp olive oil
  • 4 tbsp unsalted butter, softened
  • 1 tbsp fresh parsley, finely chopped
  • 1 tsp fresh garlic, minced

Method
 

  1. Combine garlic powder, onion powder, smoked paprika, oregano, thyme, salt, black pepper, and cayenne in a small bowl. Pat chicken breasts dry, coat with olive oil, and press the rub firmly onto all sides.
  2. Mash softened butter with fresh parsley and minced garlic in a small bowl until combined. Set aside at room temperature.
  3. Heat a large skillet over medium-high for 2 minutes. Cook chicken for 6 minutes on the first side, flip, then cook 5 to 6 minutes more until the internal temperature reaches 165°F (74°C).
  4. Remove from heat and let chicken rest in the pan for 3 minutes.
  5. Transfer to a plate, spoon 1 tbsp herb butter onto each breast while hot, garnish with a pinch of fresh parsley, and serve immediately.

Notes

The rest in step 4 matters more than it seems — skipping it means the juices run out the moment you cut into the chicken. If you want to get ahead, the herb butter can be made up to 5 days in advance and kept in the fridge. This recipe doubles easily for 4 people; just make sure your pan is large enough so the breasts aren't touching, otherwise they steam rather than sear.
