Hamburger Steak Recipe

Ingredients
  

  • 1 lb (450g) ground beef (80/20)
  • 1/4 cup breadcrumbs
  • 1 large egg
  • 1 tsp Worcestershire sauce
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 tbsp neutral oil
  • 1 medium yellow onion, sliced into half-rings
  • 2 cups beef broth
  • 2 tbsp all-purpose flour
  • 1 tsp Worcestershire sauce (for gravy)
  • 1/2 tsp black pepper (for gravy)
  • Salt to taste (for gravy)
  • Chopped flat-leaf parsley, for garnish

Method
 

  1. Combine the ground beef, breadcrumbs, egg, 1 tsp Worcestershire sauce, garlic powder, onion powder, salt, and pepper. Mix just until combined, shape into 4 oval patties about 3/4 inch thick, and press a thumbprint into the center of each.
  2. Heat the oil in a large skillet over medium-high heat. Sear the patties 3 to 4 minutes per side until deeply browned, then transfer to a plate.
  3. Reduce heat to medium. Cook the sliced onions in the same pan for 5 to 6 minutes, stirring occasionally, until softened and golden at the edges.
  4. Sprinkle the flour over the onions and stir for 1 minute. Slowly whisk in the beef broth, then add the 1 tsp Worcestershire sauce and 1/2 tsp black pepper. Simmer 2 to 3 minutes until the gravy coats a spoon. Taste and add salt as needed.
  5. Return the patties to the skillet, spoon gravy over them, cover, and simmer on low for 10 to 12 minutes until the patties reach an internal temperature of 160°F (71°C).
  6. Transfer patties to a plate, spoon the onion gravy generously over the top, and scatter chopped flat-leaf parsley over everything before serving.

Notes

These patties are best eaten the day they're made, but the leftovers reheat well if you keep them stored in the gravy. If the gravy thickens too much as it sits in the fridge, a small splash of beef broth when reheating brings it right back. Don't skip the thumbprint in the center of each patty; it's a small thing that genuinely makes a difference in how evenly they cook.
