Green Tea Recipe

Ingredients
  

  • 3 green tea bags
  • 2 cups hot water (175°F / 80°C)
  • 3 tbsp honey
  • 3 tbsp warm water
  • 2 cups cold water
  • 2 cups ice
  • 1 lemon, sliced (optional)

Method
 

  1. Pour 2 cups of water heated to 175°F (80°C) over the 3 green tea bags and steep for exactly 3 minutes, then remove the bags without squeezing.
  2. Stir the 3 tbsp honey into the 3 tbsp warm water until fully dissolved.
  3. Combine the honey syrup with the brewed tea, add the 2 cups of cold water, stir well, and taste for sweetness.
  4. Fill 2 glasses with the 2 cups of ice, pour the tea over, add lemon slices, and serve immediately.

Notes

Don't walk away during the steep — 3 minutes is the number that keeps this tea bright without any bitterness. The concentrate keeps well in the fridge for up to 3 days, so you can brew a double batch and have it ready to pour all week. Taste it before icing, since the ice will dilute it slightly as it melts.
