Greek Pasta Salad Recipe

Ingredients
  

  • 3 cups rotini pasta, dry
  • 1 English cucumber, halved and sliced
  • 1 cup cherry tomatoes, halved
  • 1 red bell pepper, diced
  • 1/2 red onion, thinly sliced
  • 1/2 cup kalamata olives, pitted and halved
  • 1 cup crumbled feta cheese
  • 1/4 cup pepperoncini peppers, sliced
  • 1/3 cup extra virgin olive oil
  • 3 tbsp red wine vinegar
  • 1 tbsp lemon juice
  • 1 tsp dried oregano
  • 1/2 tsp garlic powder
  • 1/2 tsp salt
  • 1/4 tsp black pepper

Method
 

  1. Boil the 3 cups rotini in well-salted water until al dente (lower end of package time), drain, and rinse under cold water. Spread out to dry briefly.
  2. Whisk together the 1/3 cup olive oil, 3 tbsp red wine vinegar, 1 tbsp lemon juice, 1 tsp oregano, 1/2 tsp garlic powder, 1/2 tsp salt, and 1/4 tsp black pepper in a small bowl until emulsified.
  3. Combine the sliced cucumber, 1 cup cherry tomatoes, diced red bell pepper, 1/2 sliced red onion, 1/2 cup kalamata olives, and 1/4 cup pepperoncini peppers in a large bowl and toss to mix.
  4. Add the cooled pasta to the vegetable bowl, pour the dressing over the top, and toss until everything is evenly coated.
  5. Fold in the 1 cup crumbled feta with 3 to 4 slow folds, transfer to a wide serving bowl, top with extra feta, and drizzle with olive oil and a pinch of dried oregano.

Notes

If you're making this ahead for a party, pull it from the fridge 15 minutes before serving so it's not ice cold when it hits the table. The dressing gets thick and muted when it's very cold, and a few minutes at room temperature brings it back. Block feta is worth seeking out here, because it crumbles into irregular pieces that hold their texture better than the dry, pre-crumbled kind.
