Gorditas Recipe

Ingredients
  

  • 2 cups all-purpose flour
  • 1 tsp baking powder
  • 1 tsp salt, divided
  • 3/4 cup warm water
  • 2 tbsp vegetable oil
  • 1 lb ground beef (80/20)
  • 1 packet (1 oz) taco seasoning
  • 1/2 cup water
  • 1 cup shredded cheddar cheese
  • 1 cup shredded iceberg lettuce
  • 1/2 cup sour cream
  • 1/2 cup diced tomato
  • 1/4 cup diced white onion

Method
 

  1. Whisk together 2 cups flour, 1 tsp baking powder, and 1/2 tsp salt. Add 2 tbsp vegetable oil and 3/4 cup warm water, stir to combine, then knead on a floured surface for 2 minutes. Divide into 8 balls, cover, and rest for 10 minutes.
  2. Cook 1 lb ground beef in a skillet over medium-high heat for about 6 minutes, drain fat, then stir in the 1 oz taco seasoning packet and 1/2 cup water. Simmer over medium heat for 3 to 4 minutes until the liquid is absorbed.
  3. Roll each dough ball into a 5 to 6 inch circle, about 1/4 inch thick.
  4. Cook each dough round in a dry skillet over medium-high heat for 2 to 3 minutes per side until puffed and golden in spots. Stack under a towel as you go.
  5. Fill each shell with seasoned beef, 1 cup cheddar cheese, 1 cup lettuce, 1/2 cup sour cream, 1/2 cup tomato, and 1/4 cup onion. Fold, press lightly, and drizzle extra sour cream over the open edge to serve.

Notes

The dough rest is the step most people skip and then regret. The cold toppings go on last and go on right before serving so the shell does not soften from the moisture. Leftover beef keeps well and works in quesadillas or on nachos the next day.
