Garlic Parmesan Pasta Recipe

Ingredients
  

  • 1 lb chicken breast, cut into bite-size pieces
  • 2 tbsp olive oil
  • 6 cloves garlic, minced
  • 4 tbsp unsalted butter
  • 1 lb penne pasta
  • 4 cups chicken broth
  • 1 tsp Italian seasoning
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1/4 tsp red pepper flakes
  • 1 cup heavy cream
  • 1 cup grated Parmesan cheese
  • 2 tbsp fresh parsley, chopped

Method
 

  1. Set the Instant Pot to sauté, heat the olive oil, and sear the seasoned chicken until golden, about 5 minutes, then remove it from the pot.
  2. Melt the butter in the same pot and sauté the garlic for about 1 minute, scraping up any browned bits from the bottom.
  3. Add the broth, pasta, Italian seasoning, and red pepper flakes, return the chicken to the pot, seal the lid, and pressure cook on high for 4 minutes with a quick release.
  4. Switch to sauté, stir in the heavy cream and Parmesan for 2 to 3 minutes until thickened, then serve topped with parsley.

Notes

If your Instant Pot gives a burn warning after you add the broth, it almost always means there's something stuck to the bottom of the pot from the garlic step. Deglazing well with the broth before sealing the lid fixes it every time. Leftovers thicken a lot in the fridge, so loosen them with a splash of broth or cream when reheating.
