French Cruller Recipe

Ingredients
  

  • 1 cup (240ml) water
  • ½ cup (115g) unsalted butter, cubed
  • 1 tbsp granulated sugar
  • ¼ tsp salt
  • 1 cup (125g) all-purpose flour
  • 4 large eggs, room temperature
  • Neutral oil, for frying (vegetable or canola, 2 to 3 inches deep)
  • 1½ cups (180g) powdered sugar, sifted
  • 3 tbsp honey
  • 3 to 4 tbsp whole milk
  • ¼ tsp vanilla extract

Method
 

  1. Combine the water, butter, sugar, and salt in a saucepan over medium-high heat. Bring to a full boil, add flour all at once, and stir vigorously for 2 minutes until the dough pulls into a ball and leaves a film on the pan.
  2. Transfer dough to a mixer bowl, cool 3 to 4 minutes, then beat in the eggs one at a time on medium speed until the dough is smooth, glossy, and falls in a thick ribbon.
  3. Cut 12 parchment squares (about 3 inches each), fit a piping bag with a large open-star tip, and pipe 3-inch rings onto each square.
  4. Heat neutral oil to 375°F (190°C) in a heavy pot. Lower crullers in parchment-side up, remove parchment after 30 seconds, and fry 3 to 4 minutes per side until deep golden brown. Rest on a wire rack for 5 minutes.
  5. Whisk the sifted powdered sugar, honey, 3 tbsp milk, and vanilla together until smooth. Adjust consistency with the remaining milk if needed.
  6. Dip each cruller face-down into the glaze, lift, and set glaze-side up on the wire rack for 5 minutes to set. Transfer to a serving plate.

Notes

These are best eaten the day they're made, when the exterior still has a slight chew. If you're making them for a group, fry and cool them first, then glaze right before serving so the coating stays firm. The choux dough can be made up to a day ahead and kept covered in the fridge.
