Fiesta Lime Chicken Recipe

Ingredients
  

  • 4 boneless, skinless chicken breasts
  • 3 tbsp fresh lime juice
  • 3 tbsp soy sauce
  • 1 tbsp olive oil
  • 2 tsp chili powder
  • 1 tsp cumin
  • 1 tsp garlic powder
  • 1/2 tsp smoked paprika
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/2 cup ranch dressing
  • 2 tbsp sour cream
  • 1 tsp taco seasoning
  • 1 cup shredded Monterey Jack cheese
  • 1 cup tortilla strips
  • 2 tbsp fresh cilantro, chopped

Method
 

  1. Whisk the lime juice, soy sauce, olive oil, chili powder, cumin, garlic powder, smoked paprika, salt, and pepper in a bag or dish. Add the chicken and marinate in the fridge for at least 30 minutes.
  2. Stir together the ranch dressing, sour cream, and taco seasoning in a small bowl. Refrigerate until ready to use.
  3. Heat a grill pan over medium-high heat for 2 minutes. Cook the chicken 6 to 7 minutes per side until the internal temperature reaches 165°F (74°C). Rest for 3 minutes.
  4. Set the oven to broil on high. Place the chicken on a foil-lined baking sheet, top each breast with mexi-ranch sauce and Monterey Jack cheese, and broil for 2 to 3 minutes until the cheese is melted and bubbling.
  5. Transfer to plates, top with tortilla strips and a drizzle of remaining mexi-ranch sauce, and finish with fresh cilantro.

Notes

You can marinate the chicken up to 8 hours ahead, which makes this a great recipe to prep before work. The mexi-ranch sauce can be made up to 3 days in advance and stored in the fridge. If your chicken breasts are very large, slice them in half horizontally before marinating so they cook through evenly without drying out.
