Egg White Grill Recipe

Ingredients
  

  • 2 boneless, skinless chicken breasts (about 4 oz each, pounded to 1/2 inch thickness)
  • 3 tbsp pickle juice
  • 1 tbsp olive oil
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/2 tsp paprika
  • 1/4 tsp salt
  • 1/4 tsp black pepper
  • 4 large egg whites
  • 1/4 tsp salt (for egg whites)
  • 2 slices American cheese
  • 2 multigrain English muffins

Method
 

  1. Combine the chicken breasts with 3 tbsp pickle juice, 1/2 tsp garlic powder, 1/2 tsp onion powder, 1/2 tsp paprika, 1/4 tsp salt, and 1/4 tsp black pepper. Marinate for at least 15 minutes.
  2. Heat 1 tbsp olive oil in a cast iron skillet over medium-high heat. Cook the chicken for 5 to 6 minutes per side until it reaches 165°F (74°C) internally. Rest for 2 minutes.
  3. Reduce heat to medium-low. Pour 2 egg whites into each of 2 egg ring molds in the same pan, season with the 1/4 tsp salt, cover, and cook for 3 to 4 minutes until fully set.
  4. Toast the 2 English muffins cut-side down in the pan for 1 to 2 minutes until golden.
  5. Layer each sandwich: toasted muffin bottom, grilled chicken, cooked egg white round, 1 slice American cheese, and muffin top. Serve immediately.

Notes

You can marinate the chicken for up to 4 hours in the fridge if you want to do the prep the night before. The egg whites firm up fast once they're off the heat, so have your muffins toasted and your cheese ready before you pull the rings. If your chicken breasts are large, slice them in half horizontally before pounding so they fit the muffin size.
