Method
- Split and toast the 2 English muffins until the cut sides are golden and firm, about 3 to 4 minutes.
- Cook the 2 slices of Canadian bacon in a non-stick skillet over medium heat for 1 minute per side until lightly colored, then set aside.
- Melt the 1 tbsp butter in the same skillet over medium-low heat, pour in the 4 egg whites, season with 1/4 tsp salt and 1/4 tsp black pepper, add 1 tbsp water, cover, and steam for 2 to 3 minutes until fully set.
- Lay the 2 slices of white cheddar on the egg whites, replace the lid for 30 seconds to melt the cheese, then divide the egg into 2 portions with a spatula.
- Place an egg portion on each muffin bottom, top with a slice of Canadian bacon, close the sandwich, and serve immediately.
Notes
The steam method is the key step here; don't rush it by lifting the lid early. If you're using a stainless or cast iron pan rather than non-stick, keep the heat on low and give it an extra minute so the egg releases cleanly. These reheat well, so making a double batch on the weekend and storing them in the fridge is a solid option.
