Doritos Footlong Chicken Nachos Recipe

Ingredients
  

  • 1 lb boneless skinless chicken breast
  • 1 tbsp olive oil
  • 1 tsp chili powder
  • 1 tsp smoked paprika
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/2 tsp cumin
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 bag (9.75 oz / 276g) Nacho Cheese Doritos
  • 1 can (15 oz / 425g) nacho cheese sauce
  • 1/2 cup pickled jalapeño slices
  • 1/2 cup diced Roma tomatoes
  • 1/4 cup diced red onion
  • 1/2 cup sour cream
  • 1/4 cup sliced black olives
  • 2 tbsp fresh cilantro leaves

Method
 

  1. Toss the chicken with olive oil and all the spices, then sear in a skillet over medium-high heat for 4 to 5 minutes per side until the internal temperature reaches 165°F (74°C). Rest for 2 minutes, then slice.
  2. Warm the nacho cheese sauce in a small saucepan over low heat for 3 to 4 minutes, stirring until smooth and pourable.
  3. Spread the Doritos in a single layer across a large rimmed sheet pan or serving platter.
  4. Layer the sliced chicken over the chips, drizzle the warm nacho cheese sauce across the top, then scatter the jalapeños, diced tomatoes, and red onion over everything.
  5. Add dollops of sour cream, top with the black olives and fresh cilantro, and serve immediately.

Notes

Assemble this right before you're ready to eat; it does not hold well once built. If you're feeding a crowd, keep all the components warm and separate and let people build their own, which also solves the soggy chip problem. The chicken can be cooked a day ahead and reheated quickly in a skillet.
