- Toast the 1/2 cup chopped pecans in a dry skillet over medium heat for 3 to 4 minutes, stirring frequently, until fragrant and slightly darkened. Transfer to a plate to cool.
- Whisk together the 3/4 cup mayonnaise, 1 tsp apple cider vinegar, 1 tsp sugar, 1/2 tsp onion powder, 1/2 tsp garlic powder, 1/2 tsp salt, and 1/4 tsp black pepper in a large bowl until smooth.
- Fold in the 3 cups shredded chicken and 1 cup halved grapes until evenly coated.
- Fold in the toasted pecans, spoon onto croissants or lettuce, and top with a few extra grape halves and pecans to serve.
Notes
This salad is best after 30 minutes in the fridge, so if you have time, mix it ahead and let it rest before serving. If you're using rotisserie chicken, taste for salt before adding any extra since it often comes already well seasoned. Leftovers keep well for up to 4 days in a sealed container.
