Cupcake Pancakes Recipe

Ingredients
  

  • 2 cups all-purpose flour
  • 2 tbsp granulated sugar
  • 2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1 1/2 cups whole milk
  • 2 large eggs
  • 3 tbsp unsalted butter, melted and cooled
  • 1 tsp white vinegar
  • 2 tsp pure vanilla extract
  • 1 tbsp neutral oil
  • Whipped cream, for topping
  • 3 tbsp rainbow sprinkles

Method
 

  1. Whisk together the flour, sugar, baking powder, baking soda, and salt in a large bowl until evenly combined, then make a well in the center.
  2. In a separate bowl, whisk together the milk, eggs, melted butter, vinegar, and vanilla extract, then pour into the well and stir until just combined with no dry streaks, about 10 to 12 strokes.
  3. Let the batter rest for 5 minutes at room temperature until bubbles begin to form on the surface.
  4. Heat a nonstick skillet over medium heat, brush with oil, and cook 1/3 cup of batter per pancake for 2 to 3 minutes until bubbles form across the surface and edges look set, then flip and cook 1 to 2 minutes more until deep golden brown.
  5. Stack 3 pancakes per plate, top with a swirl of whipped cream, and scatter rainbow sprinkles over the top. Serve immediately.

Notes

The batter should look lumpy when you finish mixing, not smooth. If you're making these for a crowd and need to hold pancakes warm, a 200°F (93°C) oven on a baking sheet works well for up to 20 minutes without drying them out. Add the whipped cream and sprinkles only right before serving.
