Costco Pumpkin Pie Recipe

Ingredients
  

  • 1 deep-dish 10-inch pie crust
  • 29 oz pure pumpkin puree
  • 3 large eggs
  • 14 oz sweetened condensed milk
  • 1/2 cup heavy cream
  • 3/4 cup granulated sugar
  • 2 tsp ground cinnamon
  • 1 tsp ground ginger
  • 1/2 tsp ground cloves
  • 1/2 tsp ground nutmeg
  • 1 tsp fine salt
  • 1 tsp vanilla extract

Method
 

  1. Preheat oven to 425°F (220°C). Whisk together the pumpkin puree, eggs, sweetened condensed milk, heavy cream, sugar, cinnamon, ginger, cloves, nutmeg, salt, and vanilla extract in a large bowl for 2 minutes until completely smooth.
  2. Place the pie crust on a rimmed baking sheet and pour the filling in slowly, leaving a 1/4-inch gap at the top.
  3. Bake at 425°F (220°C) for 15 minutes, then reduce heat to 350°F (175°C) and bake for 50 to 60 more minutes until the edges are set and the center has a slight jiggle.
  4. Transfer to a wire rack, cool for 2 hours, slice into 10 wedges, and top each slice with whipped cream to serve.

Notes

This pie needs the full 2-hour cool before you cut it. If you slice into it warm, the filling will be too soft to hold a clean wedge shape. For a make-ahead option, bake the day before and refrigerate overnight — the texture actually improves with the extra resting time.
