Cookie Butter Cold Brew Recipe

Ingredients
  

  • 2 tbsp Biscoff spread
  • 2 tbsp granulated sugar
  • 2 tbsp water
  • 1 cup cold brew coffee concentrate
  • ½ cup whole milk, divided
  • 2 tbsp heavy cream
  • 1 cup ice
  • 1 pinch ground cinnamon

Method
 

  1. Combine 2 tbsp Biscoff spread, 2 tbsp granulated sugar, and 2 tbsp water in a small saucepan over medium heat; stir for about 2 minutes until smooth and glossy, then remove from heat.
  2. Fill a 16 oz glass with 1 cup ice, pour the cookie butter syrup over the ice, add 6 tbsp whole milk, then slowly pour in 1 cup cold brew concentrate.
  3. Froth 2 tbsp whole milk and 2 tbsp heavy cream with a handheld frother for 20 to 30 seconds until thick and foamy.
  4. Spoon the cold foam over the drink, dust with 1 pinch ground cinnamon, and serve immediately with a wide straw.

Notes

The cookie butter syrup is the make-ahead piece here; double or triple the batch and keep it in the fridge for up to a week so your morning routine is just assembly. If your cold brew is pre-diluted rather than concentrate, cut the ice back to ¾ cup. Build the drink fresh each time — once the foam is poured, it starts to flatten within about 5 minutes.
