Chipotle Steak Bowl Recipe

Ingredients
  

  • 1.5 lbs flank steak
  • 3 chipotle peppers in adobo sauce, minced
  • 2 tbsp adobo sauce
  • 3 tbsp olive oil, divided
  • 3 cloves garlic, minced
  • 1 tsp ground cumin
  • 1 tsp dried oregano
  • 1 tsp kosher salt
  • 0.5 tsp black pepper
  • 1.5 cups long-grain white rice
  • 2.25 cups water
  • 3 tbsp fresh lime juice, divided
  • 0.25 cup fresh cilantro, chopped
  • 1 can (15 oz) black beans, drained and rinsed
  • 0.5 tsp garlic powder
  • 0.5 cup pico de gallo
  • 0.5 cup sour cream
  • 1 cup shredded romaine lettuce
  • 1 lime, cut into wedges

Method
 

  1. Combine the chipotle peppers, adobo sauce, 2 tbsp olive oil, garlic, 1 tbsp lime juice, cumin, oregano, salt, and black pepper in a shallow dish. Add the flank steak, coat thoroughly, and marinate for at least 20 minutes at room temperature.
  2. Bring 2.25 cups salted water to a boil. Add the rice, reduce to low, cover, and cook 18 minutes. Rest covered for 5 minutes, then fluff and stir in 2 tbsp lime juice and cilantro.
  3. Heat the black beans with garlic powder and a pinch of salt in a small saucepan over medium-low for 5 minutes until warmed through.
  4. Heat 1 tbsp olive oil in a large cast-iron skillet over high until just smoking. Sear the steak 4 to 5 minutes per side for medium-rare (130 to 135°F / 54 to 57°C). Rest for 5 minutes, then slice thinly against the grain.
  5. Divide the rice among 4 bowls. Add the black beans and steak slices, then top with romaine, pico de gallo, and sour cream. Add a lime wedge to each bowl and serve immediately.

Notes

You can marinate the steak the night before and keep it in the fridge, which makes this a 20-minute dinner the next day. The beans can also be seasoned and refrigerated ahead; just reheat them while the steak cooks. Flank steak goes tough quickly if it overcooks, so pull it at 130°F if you are unsure and let carryover do the rest.
