Chipotle Smoked Brisket Recipe

Ingredients
  

  • 3 lbs beef brisket, flat cut
  • 2 tsp kosher salt
  • 1 tsp black pepper
  • 2 tsp smoked paprika
  • 1 tsp ground cumin
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 2 chipotle peppers in adobo sauce, chopped
  • 2 tbsp adobo sauce
  • 1 tbsp tomato paste
  • 3 cloves garlic, minced
  • 1 medium white onion, sliced
  • 1 cup beef broth
  • 1 tbsp apple cider vinegar
  • 2 tbsp neutral oil

Method
 

  1. Combine the salt, pepper, smoked paprika, cumin, garlic powder, and onion powder. Pat the brisket dry and press the rub all over the surface. Rest at room temperature for 15 minutes.
  2. Heat the oil in a Dutch oven over medium-high heat for 2 minutes. Sear the brisket fat-side down for 4 to 5 minutes, flip, and sear the other side for 3 to 4 minutes. Remove and set aside.
  3. Reduce heat to medium. Cook the onion for 3 minutes, add the garlic and cook 1 minute, stir in the tomato paste and cook 1 minute. Deglaze with the beef broth, scraping up all browned bits. Stir in the chipotle peppers, adobo sauce, and apple cider vinegar.
  4. Return the brisket fat-side up to the Dutch oven. Cover and braise at 325°F (160°C) for 3 hours, until the internal temperature reaches 200°F (93°C).
  5. Rest the brisket for 10 minutes, slice across the grain into 0.5-inch pieces, spoon the braising liquid over the top, and serve.

Notes

Preheat your oven before you start the sear so it's ready when the braising liquid is built. The braising liquid is worth saving even after the brisket is gone since it's excellent stirred into rice or used as a base for a quick soup. If your Dutch oven runs hot, check the brisket at 2.5 hours the first time you make this.
