Method
- Run the lime wedge around the outer rim of a rocks glass and press it into a shallow plate of coarse salt to coat the rim.
- Fill a cocktail shaker two-thirds full with ice, then add the 2 oz chipotle-infused tequila, 1 oz fresh lime juice, 0.5 oz agave nectar, and 0.5 oz water. Shake hard for 12 to 15 seconds.
- Fill the salted glass with fresh ice, strain the cocktail over it, squeeze the lime wedge over the top, and drop it on the rim.
Notes
If you can't find chipotle-infused tequila at a local store, making your own takes less than a day: drop 1 dried chipotle into a bottle of blanco tequila and taste every few hours. Pull the pepper out at 24 to 48 hours. The drink is best made fresh and served immediately, but you can pre-mix the liquids (without ice or water) up to 24 hours ahead and keep them refrigerated in a sealed jar.
