Chili's Southwest Chicken Soup Recipe

Ingredients
  

  • 2 tbsp olive oil
  • 1 medium yellow onion, diced
  • 4 garlic cloves, minced
  • 1 jalapeño, seeded and diced
  • 1.5 tsp ground cumin
  • 1 tsp smoked paprika
  • 1 tsp chili powder
  • 0.5 tsp dried oregano
  • 1 chipotle pepper in adobo sauce, minced
  • 1 tbsp adobo sauce
  • 2 boneless skinless chicken breasts (about 600g / 1.3 lbs total)
  • 1 can (400g / 14 oz) diced tomatoes
  • 1 can (400g / 14 oz) black beans, drained and rinsed
  • 1.5 cups frozen corn kernels
  • 4 cups chicken broth
  • 1 tbsp fresh lime juice
  • Salt and black pepper
  • Tortilla strips, sour cream, shredded cheese, fresh cilantro

Method
 

  1. Warm the olive oil in a large pot over medium heat. Add the onion and cook for 5 minutes until soft, then add the garlic and jalapeño and cook for 2 more minutes.
  2. Stir in the cumin, smoked paprika, chili powder, and oregano. Cook for 1 minute, stirring constantly, until fragrant.
  3. Add the chipotle pepper, adobo sauce, chicken broth, and diced tomatoes. Stir and bring to a simmer over medium-high heat, about 4 to 5 minutes.
  4. Add the whole chicken breasts, reduce heat to medium-low, and cook partially covered for 18 to 20 minutes until the internal temperature reaches 165°F (74°C). Remove and shred with 2 forks.
  5. Return the shredded chicken to the pot. Add the black beans and frozen corn and simmer over medium heat for 5 minutes. Stir in the lime juice and season with salt and pepper.
  6. Ladle into bowls and top with tortilla strips, sour cream, shredded cheese, and fresh cilantro.

Notes

This soup keeps well and tastes even better the next day once the chicken has had time to absorb the broth. If you're making it ahead, hold off on adding the lime juice until you reheat it. The chipotle heat can vary quite a bit between brands, so start with half a pepper if you're cooking for people who are sensitive to spice.
