Chicken Tortilla Soup Recipe

Ingredients
  

  • 1.5 lbs boneless, skinless chicken breasts
  • 1 tbsp olive oil
  • 1 medium yellow onion, diced
  • 4 garlic cloves, minced
  • 1 jalapeño, seeded and diced
  • 1 can (14.5 oz) fire-roasted diced tomatoes
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 cup frozen corn
  • 4 cups low-sodium chicken broth
  • 2 tsp ground cumin
  • 1 tsp smoked paprika
  • 1 tsp chili powder
  • 1 tsp kosher salt
  • 0.5 tsp black pepper
  • Juice of 1 lime
  • 3 corn tortillas
  • 1 tbsp olive oil (for tortilla strips)
  • Sour cream, shredded cheddar, fresh cilantro (for serving)

Method
 

  1. Heat 1 tbsp olive oil in a large pot over medium heat. Sauté the diced onion for 5 minutes until soft, then add the minced garlic and jalapeño and cook for 1 more minute.
  2. Stir in the 2 tsp cumin, 1 tsp smoked paprika, and 1 tsp chili powder and cook for 30 seconds. Add the chicken broth, fire-roasted tomatoes, whole chicken breasts, salt, and pepper. Bring to a boil, reduce to a low simmer, cover, and cook for 20 minutes until the chicken reaches 165°F (74°C).
  3. While the soup simmers, preheat the oven to 400°F (200°C). Toss the tortilla strips with 1 tbsp olive oil, spread on a baking sheet, and bake for 10 to 12 minutes, flipping once, until crisp and golden.
  4. Remove the chicken, shred it with 2 forks, and return it to the pot. Add the black beans and corn. Simmer over medium-low for 5 minutes, then stir in the lime juice and adjust salt to taste.
  5. Ladle into bowls and top with baked tortilla strips, sour cream, shredded cheddar, and fresh cilantro.

Notes

This soup keeps well in the fridge, and the flavor deepens overnight, so it's a solid make-ahead option. Store the tortilla strips separately at room temperature so they stay crisp when you reheat. If the broth thickens too much after refrigerating, just loosen it with a small splash of chicken broth while reheating.
