Chicken Pot Pie Recipe

Ingredients
  

  • 3 cups cooked chicken, shredded
  • 1 cup frozen peas
  • 1 cup diced carrots
  • 1 cup diced celery
  • 1 cup diced yellow onion
  • 3 cloves garlic, minced
  • 4 tbsp unsalted butter
  • 1/3 cup all-purpose flour
  • 2 cups chicken broth
  • 1 cup whole milk
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp dried thyme
  • 1/4 tsp garlic powder
  • 2 sheets refrigerated pie crust
  • 1 egg

Method
 

  1. Heat oven to 425°F (220°C). Melt the butter in a large pot over medium heat. Add onion, carrots, and celery and cook for 6 minutes until softened. Stir in garlic for 1 minute.
  2. Sprinkle in the flour and stir for 2 minutes. Add chicken broth gradually, then the milk. Stir until the sauce simmers and thickens, about 5 minutes.
  3. Reduce heat to low. Add chicken, peas, salt, pepper, thyme, and garlic powder. Stir and heat for 2 minutes. Taste and adjust salt.
  4. Remove from heat and cool for 5 minutes. Press 1 pie crust sheet into a 9-inch pie dish. Pour in the filling.
  5. Top with the second crust sheet, crimp the edges to seal, and cut 4 slits in the center. Whisk the egg with 1 tsp water and brush over the top crust.
  6. Bake for 30 to 35 minutes until the crust is deep golden brown and the filling is bubbling. Rest for 10 minutes, then cut and serve.

Notes

The filling thickens further as it cools, so don't panic if it looks a little loose when it first comes off the stove. If you're making this for the first time, taste the filling before it goes into the crust and add a little more salt if it tastes flat. Leftover filling without crust reheats well as a thick soup with a splash of extra broth stirred in.
