Chicken Madeira Recipe

Ingredients
  

  • 4 boneless, skinless chicken breasts
  • Salt and black pepper
  • 2 tbsp olive oil
  • 2 tbsp unsalted butter
  • 8 oz cremini mushrooms, sliced
  • 4 cloves garlic, minced
  • 1 cup Madeira wine
  • 1 cup beef broth
  • 1 tbsp cornstarch
  • 1 lb asparagus, trimmed
  • 4 oz fresh mozzarella, sliced
  • Fresh parsley, chopped

Method
 

  1. Season the chicken breasts with salt and pepper. Heat 2 tbsp olive oil in a large oven-safe skillet over medium-high heat and sear the chicken for 4 to 5 minutes per side until deeply golden. Remove to a plate. Preheat oven to 400°F (200°C).
  2. Melt 2 tbsp butter in the same skillet over medium heat. Add the 8 oz sliced cremini mushrooms and cook for 5 to 6 minutes until golden and the pan is dry. Stir in the 4 cloves minced garlic for 1 minute.
  3. Pour in the 1 cup Madeira wine, scraping the pan. Reduce for 3 minutes over medium-high heat. Whisk the 1 tbsp cornstarch into the 1 cup beef broth, pour into the skillet, and simmer for 4 to 5 minutes until the sauce coats a spoon.
  4. Add the 1 lb trimmed asparagus to the skillet and cook in the sauce for 2 minutes until just tender but still firm.
  5. Return the chicken to the skillet on top of the asparagus. Lay the 4 oz sliced mozzarella over each breast and bake at 400°F (200°C) for 10 to 12 minutes until the mozzarella melts and the chicken reaches 165°F (74°C).
  6. Spoon the sauce over the chicken, transfer to warmed plates with asparagus alongside, and top with chopped fresh parsley.

Notes

The sauce can be made up to 2 days ahead and refrigerated; reheat it in the skillet before adding the asparagus and finishing the dish. If your Madeira is on the sweeter side, taste the sauce before adding the cornstarch slurry and add a small splash of red wine vinegar to balance it out. An instant-read thermometer is the most reliable way to check doneness here since breast size varies quite a bit.
