Chick-fil-A Sandwich Recipe

Ingredients
  

  • 2 boneless, skinless chicken breasts, halved horizontally into 4 cutlets
  • 1 cup dill pickle brine
  • 1 cup buttermilk
  • 1 large egg
  • 1 cup all-purpose flour
  • 2 tbsp powdered sugar
  • 1 tsp paprika
  • 1 tsp garlic powder
  • 1 tsp fine salt
  • 1/2 tsp black pepper
  • 1/2 tsp celery salt
  • 2 cups peanut oil, for frying
  • 4 brioche or potato buns
  • 2 tbsp unsalted butter
  • Dill pickle slices

Method
 

  1. Combine the pickle brine, buttermilk, and egg in a bag or dish. Add the chicken cutlets and refrigerate for at least 30 minutes, up to 4 hours.
  2. Whisk together the flour, powdered sugar, paprika, garlic powder, salt, black pepper, and celery salt in a wide shallow bowl.
  3. Remove each cutlet from the brine, let excess drip off, then press firmly into the flour coating on both sides. Rest on a rack for 5 minutes.
  4. Heat the peanut oil in a deep skillet to 350°F (175°C). Fry 2 cutlets at a time for 4 to 5 minutes per side until deep amber and the internal temperature reads 165°F (74°C). Repeat with remaining cutlets.
  5. Melt the butter in a skillet over medium heat and toast the buns cut-side down for 90 seconds until golden. Assemble with fried chicken, top with pickle slices, and serve immediately.

Notes

The brine time really does matter here, so build it into your day before dinner. If you're short on peanut oil, canola works just as well at the same temperature. Leftovers reheat best in the oven or air fryer rather than the microwave, which tends to soften the crust.
