Chick-fil-A Market Salad Recipe

Ingredients
  

  • 1 lb boneless skinless chicken breast
  • 6 cups chopped romaine lettuce
  • 2 cups chopped green leaf lettuce
  • 1 cup fresh blueberries
  • 1 cup fresh strawberries, sliced
  • 1/2 cup red apple, diced small
  • 1/2 cup sweet corn kernels
  • 1/3 cup crumbled blue cheese
  • 1/2 cup granola clusters
  • 1/4 cup roasted, salted sunflower seeds
  • 3 tbsp apple cider vinegar
  • 2 tbsp honey
  • 1 tbsp Dijon mustard
  • 1/2 tsp garlic powder
  • 1/4 tsp onion powder
  • 1/4 tsp salt
  • 1/4 tsp black pepper
  • 1/3 cup olive oil

Method
 

  1. Pat the 1 lb chicken breast dry, season both sides with salt and pepper, and grill over medium-high heat for 6 to 7 minutes per side until the internal temperature reaches 165°F (74°C). Rest for 5 minutes, then slice against the grain.
  2. Whisk together the 3 tbsp apple cider vinegar, 2 tbsp honey, 1 tbsp Dijon mustard, 1/2 tsp garlic powder, 1/4 tsp onion powder, 1/4 tsp salt, and 1/4 tsp black pepper. Drizzle in the 1/3 cup olive oil while whisking until the dressing emulsifies.
  3. Combine the 6 cups romaine and 2 cups green leaf lettuce in a large bowl. Drizzle with half the vinaigrette and toss to coat.
  4. Top the dressed greens with the 1 cup blueberries, 1 cup sliced strawberries, 1/2 cup diced apple, 1/2 cup corn, 1/3 cup blue cheese, and 1/4 cup sunflower seeds.
  5. Lay the sliced chicken over the salad, scatter the 1/2 cup granola clusters on top, and drizzle the remaining vinaigrette over everything.

Notes

You can grill the chicken up to 2 days ahead and keep it sliced in the fridge, which makes this a genuinely fast weeknight salad. If you are packing it for lunch, keep the dressing, granola, and apple in separate containers and combine everything right before eating.
