Cheese Fries Recipe

Ingredients
  

  • 2 lbs russet potatoes
  • 3 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp smoked paprika
  • 1 tsp salt
  • ½ tsp black pepper
  • 2 tbsp unsalted butter
  • 2 tbsp all-purpose flour
  • 1 cup whole milk
  • 1 cup shredded sharp cheddar
  • ½ cup shredded Monterey Jack
  • 1 tbsp pickled jalapeños, finely chopped
  • ½ tsp onion powder
  • ¼ tsp cayenne pepper
  • 2 tbsp sour cream
  • 2 tbsp fresh chives, chopped

Method
 

  1. Heat the oven to 425°F (220°C). Cut the potatoes into ½-inch sticks, toss with olive oil, garlic powder, smoked paprika, salt, and black pepper, then spread in a single layer across 2 sheet pans. Roast for 30 to 35 minutes, flipping once at 15 minutes, until the edges are deep golden brown.
  2. When the fries have about 10 minutes left, melt the butter in a small saucepan over medium heat. Whisk in the flour and stir for 1 minute until the paste is lightly tan. Gradually whisk in the milk and cook for 3 to 4 minutes, stirring often, until the sauce thickens and coats the back of a spoon.
  3. Remove the pan from the heat. Stir in the cheddar and Monterey Jack a handful at a time until fully melted. Add the pickled jalapeños, onion powder, cayenne, and sour cream, and stir until the sauce is smooth.
  4. Pile the hot fries onto a serving plate, pour the cheese sauce over the top, scatter the fresh chives over everything, and serve immediately.

Notes

The cheese sauce firms up quickly as it sits, so time the sauce to finish right as the fries come out. If you need to hold either component for a few minutes, keep the sauce on the lowest heat setting and give it a stir before pouring. Leftovers reheat best when the fries and sauce are stored and warmed separately.
