Carrot Raisin Salad Recipe

Ingredients
  

  • 4 cups shredded carrots (about 5 to 6 medium carrots)
  • 3/4 cup raisins
  • 1/2 cup mayonnaise
  • 2 tbsp pineapple juice
  • 1 tbsp sugar
  • 1 tbsp apple cider vinegar
  • 1/4 tsp salt

Method
 

  1. Peel and grate the carrots on the large holes of a box grater until you have 4 cups of shredded carrot. Place in a large mixing bowl.
  2. In a small bowl, whisk together the 1/2 cup mayonnaise, 2 tbsp pineapple juice, 1 tbsp sugar, 1 tbsp apple cider vinegar, and 1/4 tsp salt until smooth and glossy, about 1 minute. Taste and adjust salt if needed.
  3. Add the 3/4 cup raisins to the carrots, pour the dressing over the top, and fold everything together with a spatula until every strand is coated, about 1 to 2 minutes.
  4. Cover and refrigerate for at least 30 minutes, then spoon into a serving bowl with a few extra raisins scattered on top.

Notes

This salad keeps well for up to 3 days in the fridge, and the flavor genuinely improves after a few hours. If you're making it for a gathering, mix it the night before and give it a good stir right before you set it out. A little liquid pooling at the bottom after day 2 is normal; just stir it back in.
