Carrot Cake Recipe

Ingredients
  

  • 2 cups all-purpose flour
  • 2 tsp baking soda
  • 1 1/2 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1/2 tsp salt
  • 1 1/2 cups granulated sugar
  • 4 large eggs
  • 1 cup vegetable oil
  • 3 cups finely grated carrots
  • 1/2 cup crushed pineapple, drained
  • 1 cup chopped walnuts
  • 16 oz (450g) full-fat cream cheese, softened
  • 1/2 cup (1 stick / 115g) unsalted butter, softened
  • 3 1/2 cups powdered sugar, sifted
  • 1 1/2 tsp vanilla extract

Method
 

  1. Preheat the oven to 350°F (175°C), grease and line a 9x13-inch pan, then whisk together the 2 cups flour, 2 tsp baking soda, 1 1/2 tsp cinnamon, 1/2 tsp nutmeg, and 1/2 tsp salt in a large bowl.
  2. In a separate bowl, whisk the 4 eggs and 1 1/2 cups sugar until pale and slightly thickened, about 2 minutes, then whisk in the 1 cup vegetable oil until glossy and combined.
  3. Stir the 3 cups grated carrots and 1/2 cup drained pineapple into the wet ingredients, fold into the dry ingredients until just combined, then stir in the 1 cup walnuts.
  4. Pour the batter into the prepared pan and bake at 350°F (175°C) for 40 to 45 minutes, until a toothpick in the center comes out clean. Cool completely in the pan, at least 1 hour.
  5. Beat the 16 oz cream cheese and 1/2 cup butter on medium speed until smooth, about 2 minutes, then add the 3 1/2 cups sifted powdered sugar in 3 additions, mix in the 1 1/2 tsp vanilla, and beat 1 more minute until thick and creamy.
  6. Spread the frosting over the cooled cake, scatter chopped walnuts on top, add a few swirls with your spatula, and slice.

Notes

This cake is one of those recipes where patience with the cooling step actually changes the result. Frost it too early and you will have cream cheese soup on top of your cake. The flavor is best on day 2, so if you have the time to bake it the night before, do it. Leftovers keep covered in the fridge for up to 5 days.
