Cajun Gravy Recipe

Ingredients
  

  • 4 tbsp unsalted butter
  • 1/3 cup all-purpose flour
  • 2 1/2 cups low-sodium chicken stock
  • 1/4 cup beef stock
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1 tsp black pepper
  • 1/2 tsp cayenne pepper
  • 1/2 tsp smoked paprika
  • 3/4 tsp kosher salt
  • 1 tsp Worcestershire sauce

Method
 

  1. Melt 4 tbsp unsalted butter in a heavy saucepan over medium heat, add 1/3 cup all-purpose flour, and whisk constantly for 6 to 9 minutes until the roux is the color of milk chocolate.
  2. Stir in the 1/2 tsp garlic powder, 1/2 tsp onion powder, 1 tsp black pepper, 1/2 tsp cayenne, 1/2 tsp smoked paprika, and 3/4 tsp kosher salt and stir for 30 seconds to bloom the spices.
  3. Gradually whisk in the 2 1/2 cups chicken stock and 1/4 cup beef stock, bring to a boil over medium-high heat, then reduce to medium-low and simmer for 8 to 10 minutes until thick enough to coat the back of a spoon.
  4. Remove from heat, stir in the 1 tsp Worcestershire sauce, taste for salt, then ladle over mashed potatoes or biscuits and finish with a pinch of black pepper on top.

Notes

The roux is where patience pays off. Pull it off the heat while the gravy is slightly looser than you want, because it thickens as it cools. If you're making this ahead, store it without the Worcestershire and stir it in fresh when you reheat.
