Burrito Bowl Recipe

Ingredients
  

  • 2 lbs boneless, skinless chicken thighs
  • 2 tsp chipotle chili powder
  • 1 tsp ground cumin
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp dried oregano
  • 1 tsp kosher salt
  • 1/2 tsp black pepper
  • 2 tbsp vegetable oil
  • 1 1/2 cups long-grain white rice
  • 2 3/4 cups water
  • 1 tsp kosher salt
  • 3 tbsp fresh lime juice
  • 1/4 cup fresh cilantro, chopped
  • 1 can (15 oz) black beans
  • 1/2 tsp ground cumin
  • 1/4 tsp kosher salt
  • 1 cup corn kernels
  • 1/2 cup pico de gallo
  • 1 ripe avocado
  • 1/4 cup sour cream
  • 1/4 cup shredded Mexican cheese blend

Method
 

  1. Mix the spice rub and coat the chicken thighs. Sear in 1 tbsp hot oil in a cast iron skillet over medium-high heat for 5 to 6 minutes per side until charred and the internal temp reads 165°F (74°C). Rest for 5 minutes.
  2. Toast the rinsed rice in the remaining 1 tbsp oil for 2 minutes over medium heat. Add 2 3/4 cups water and 1 tsp kosher salt, bring to a boil, cover, and simmer on low for 18 minutes. Remove from heat and rest 5 minutes covered, then fluff and stir in 2 tbsp lime juice and the cilantro.
  3. Warm the black beans with 1/2 tsp cumin and 1/4 tsp kosher salt in a small saucepan over medium-low heat for 3 to 4 minutes.
  4. Slice the rested chicken thighs against the grain into 1/2-inch strips.
  5. Divide the rice among 4 bowls. Top with sliced chicken, black beans, corn, and pico de gallo. Add avocado, sour cream, and shredded cheese, then squeeze the remaining 1 tbsp lime juice over the bowls and serve.

Notes

You can make the rice, beans, and chicken up to 4 days ahead and store them separately in the fridge, which makes weeknight assembly take about 5 minutes. If you're doubling the recipe, cook the chicken in 2 batches so the pan stays hot enough to sear rather than steam. Hold off on the avocado until just before you eat.
