Burger King Chicken Fries Recipe

Ingredients
  

  • 500g (about 1.1 lb) chicken breast, cut into thin finger-shaped strips
  • 60g (½ cup) all-purpose flour
  • 2 large eggs, beaten
  • 100g (1 cup) panko breadcrumbs
  • 1 tsp smoked paprika, divided
  • 1 tsp garlic powder, divided
  • ½ tsp onion powder, divided
  • ½ tsp cayenne pepper, divided
  • 1 tsp fine salt, divided
  • ½ tsp black pepper, divided
  • Neutral oil for frying

Method
 

  1. Combine the flour with half the smoked paprika, garlic powder, onion powder, cayenne, salt, and pepper in a shallow bowl. Beat the eggs in a second bowl. Mix the panko with the remaining spices, salt, and pepper in a third bowl.
  2. Dredge each chicken strip in the seasoned flour, dip in egg, then press firmly into the panko. Set on a plate or wire rack.
  3. Heat oil in a deep pan to 175°C (350°F). Fry the strips in batches of 4 to 5 for 3 to 4 minutes, turning once, until deep golden and cooked through to 74°C (165°F) internal temperature. Rest on a wire rack between batches.
  4. Stand the chicken fries upright in a tall glass or small jar and serve immediately with dipping sauce alongside.

Notes

Pat the chicken strips dry before coating — this is the single biggest factor in keeping the crust attached. If you're cooking for a crowd, keep the finished batches warm in a 120°C (250°F) oven on a wire rack while you fry the rest. The spice mix is easy to double and keep in a jar for next time.
