Buffalo Wild Wings Buffalo Wings Recipe

Ingredients
  

  • 3 lbs chicken wings
  • 1 tbsp baking powder
  • 1 tsp kosher salt
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/2 tsp black pepper
  • 1/2 cup Frank's RedHot Original
  • 4 tbsp unsalted butter
  • 1 tbsp white vinegar
  • 1 tsp Worcestershire sauce
  • 1/2 tsp garlic powder
  • 1/2 tsp cayenne pepper
  • Blue cheese or ranch dressing, for serving

Method
 

  1. Preheat oven to 425°F (220°C) with a wire rack set on a lined baking sheet. Toss the 3 lbs wings in the 1 tbsp baking powder, 1 tsp kosher salt, 1 tsp garlic powder, 1 tsp onion powder, and 1/2 tsp black pepper, then arrange in a single layer on the rack.
  2. Bake for 45 to 50 minutes, flipping once at 25 minutes, until the skin is deep golden brown and crispy at the edges.
  3. In a small saucepan over medium-low heat, melt the 4 tbsp butter, then stir in the 1/2 cup Frank's RedHot, 1 tbsp white vinegar, 1 tsp Worcestershire sauce, 1/2 tsp garlic powder, and 1/2 tsp cayenne pepper. Simmer for 3 to 4 minutes until glossy and slightly thickened.
  4. Transfer hot wings to a large bowl, pour the sauce over, and toss until every wing is fully coated, about 30 seconds.
  5. Arrange on a serving platter, spoon extra sauce over the top, and serve immediately with blue cheese or ranch dressing and celery sticks alongside.

Notes

These wings are best eaten right after tossing, while the skin is still hot and the sauce is sticky. If you're cooking for a crowd in batches, keep the first batch warm on the wire rack in a 200°F (93°C) oven and toss all the wings in sauce together at the end. A second toss through any sauce left in the bowl just before serving never hurts.
