BBQ Chicken Recipe

Prep Time 15 minutes
Cook Time 43 minutes
Total Time 58 minutes
Servings: 4 servings

Ingredients

  • 4 lbs bone-in chicken pieces (drumsticks and thighs)
  • 1 cup all-purpose flour
  • 2 tsp garlic powder
  • 2 tsp onion powder
  • 2 tsp smoked paprika
  • 1 tsp dried thyme
  • 1 tsp dried oregano
  • 1 tsp celery salt
  • 1 tsp black pepper
  • 1 tsp salt
  • 2 large eggs
  • 3 tbsp whole milk
  • 3 tbsp neutral oil (canola or vegetable)
  • 1 cup BBQ sauce
  • 2 tbsp apple cider vinegar
  • 1 tbsp brown sugar
  • 1 tsp Worcestershire sauce

Method

  1. Preheat the oven to 400°F (200°C) with a wire rack on a lined baking sheet. Whisk together the flour, garlic powder, onion powder, smoked paprika, thyme, oregano, celery salt, black pepper, and salt in a shallow bowl. Beat the eggs and milk in a second bowl. Pat the chicken dry, dip each piece in the egg wash, then press firmly into the flour mixture on all sides.
  2. Heat the 3 tbsp oil in a large skillet over medium-high heat. Sear the coated chicken in batches, skin-side down first, for 3 to 4 minutes per side until pale golden, then transfer to the wire rack.
  3. Bake the chicken at 400°F (200°C) for 30 minutes, until the internal temperature reaches at least 160°F (71°C).
  4. While the chicken bakes, stir together the BBQ sauce, apple cider vinegar, brown sugar, and Worcestershire sauce in a small saucepan over medium-low heat. Simmer for 5 minutes until slightly thickened, then remove from heat.
  5. Switch the oven to broil on high. Brush a generous coat of glaze over all the chicken pieces. Broil for 3 minutes, brush on a second coat, then broil for another 2 to 3 minutes until bubbling and deeply caramelized.
  6. Transfer to a serving platter, brush on any remaining glaze, and scatter sliced scallions over the top before serving.

Notes

This recipe holds up well as a meal-prep option since the flavor deepens overnight in the fridge. If you're cooking for a crowd, sear the chicken in batches and don't rush it — crowding the pan is the most common reason the crust goes soft before it ever reaches the oven.
