- Whisk together the honey, rice wine vinegar, mayonnaise, Dijon mustard, sesame oil, soy sauce, garlic powder, and salt until smooth. Taste and adjust, then set aside.
- Set up three bowls with flour, beaten eggs, and seasoned panko. Coat each chicken breast in flour, dip in egg, then press firmly into the panko.
- Heat the vegetable oil in a skillet over medium-high heat. Cook the chicken 5 to 6 minutes per side until deep golden and the internal temperature reaches 165°F (74°C). Rest for 3 minutes, then slice.
- Toss the romaine, red cabbage, and carrot with two-thirds of the dressing until coated.
- Lay the sliced chicken over the salad, scatter the toasted almonds and chow mein noodles on top, drizzle with the remaining dressing, and serve immediately.
Notes
The dressing can be made up to 3 days ahead and stored in a sealed jar in the fridge. If you're serving this to a group, keep the salad components and dressing separate until just before eating so nothing gets soggy. The chicken is best fresh, but leftover slices reheat well in the oven at 375°F for about 8 to 10 minutes.
