- Combine the 1/2 cup water, 1/2 cup sugar, 1 cinnamon stick, and 1/4 tsp ground cinnamon in a small saucepan over medium heat. Stir until the sugar dissolves, then simmer for 8 minutes. Remove from heat, discard the cinnamon stick, and cool for 5 minutes.
- Warm the 2 cups apple juice in a small saucepan over medium-low heat for about 5 minutes, until it reaches 160°F (70°C). Do not let it boil.
- Remove the juice from the heat and stir in the 2 tbsp cinnamon syrup. Taste and adjust with more syrup if needed, then pour into 2 mugs.
- Top each drink with whipped cream and a pinch of ground cinnamon or cinnamon sugar. Serve immediately.
Notes
The syrup recipe makes more than you need for 1 batch of drinks, and that is by design. Store the leftovers in a jar in the fridge for up to 2 weeks and use it for future ciders without any extra cooking. Apple juices vary in sweetness, so always taste the drink before you serve it and add syrup to match your juice.
